  •  bay leaf 
  • 1.5 pounds beef for stew, cut into cubes
  • 3.5 cups beef stock 
  •  carrots peeled sliced
  • 0.3 cup cilantro leaves fresh chopped
  •  garlic clove minced
  • 0.3 teaspoon ground cumin 
  • cup lentils 
  • 0.3 cup onion finely chopped
  •  potatoes diced peeled
  • servings salt and pepper 
  • 0.5 teaspoon tomato paste

Directions

  1. In a slow cooker, combine all ingredients except the potatoes, cilantro, salt and black pepper.Cover and cook on high for 4 hours.
  2. Add the potatoes and cook for 30 more minutes.Stir in cilantro and season to taste with salt and black pepper.
  3. Serve over white rice.
