  • 0.5 cup asian chili sauce sweet
  • teaspoon cornstarch 
  • teaspoon ginger fresh minced peeled
  •  garlic cloves minced
  • tablespoons vegetable oil; peanut oil preferred 
  • 0.3 cup roasted cashews unsalted chopped
  •  scallions minced
  • ounce mushroom caps minced stemmed
  • pound chicken thighs boneless skinless minced
  • tablespoons soya sauce

Directions

  1. Arrange lettuce leaves on a large platter.
  2. Pour chili sauce into a small bowl; place onplatter with leaves.
  3. Mix chicken, scallions,soy sauce, and cornstarch in a mediumbowl; marinate 10 minutes at room temperature,stirring occasionally.
  4. Heat oil in alarge nonstick skillet.
  5. Add mushrooms; stirfry15 seconds.
  6. Add garlic and ginger andstir-fry 10 seconds.
  7. Add chicken mixtureand cook, stirring often, until golden brownand cooked through, about 3-4 minutes.Spoon chicken mixture into lettuce leaves,dividing equally.
