  • cup almonds sliced
  • 0.5 teaspoon double-acting baking powder 
  • 0.5 cup brown sugar light packed
  • tablespoon canola oil 
  • ounces chocolate chunks such as scharffen berger (60-70% cocoa solids)
  • 0.8 cup cherries dried
  • large eggs lightly beaten
  • 0.8 cup flour all-purpose
  • 0.3 cup granulated sugar 
  • 0.3 teaspoon salt 
  • tablespoons butter unsalted softened
  • tablespoon vanilla extract 
  • 0.5 cup flour whole-wheat

Directions

  1. Preheat oven to 37
  2. In a large bowl, combine butter and sugars; beat with an electric mixer until fluffy.
  3. Add oil and eggs; beat until creamy. Stir in vanilla.
  4. In a medium bowl, combine flours, baking powder, and salt.
  5. Add flour mixture to butter mixture; stir well. Gently fold in chocolate, cherries, and almonds.
  6. Scoop batter by heaping tablespoons onto 2 baking sheets covered with parchment paper.
  7. Bake cookies in 2 batches in upper and lower third of oven until golden on top and bottom (12-15 minutes).
  8. Transfer cookies on parchment paper to a wire rack; cool (cookies will crisp as they cool). Store cookies at room temperature in an airtight container (they will keep for up to 4 days).
