Suggestions

If you’re looking for a vibrant and flavorful chicken dish that’s both gluten-free and dairy-free, this Lime & Coriander Chicken is a fantastic choice. Marinating the chicken in a zesty combination of fresh lime juice, crushed garlic, aromatic black peppercorns, and heaps of fresh coriander gives the meat a bright, refreshing kick that’s perfect for any meal. Whether you’re planning a relaxed weekend barbecue or a simple weeknight dinner, this recipe brings a burst of citrusy freshness balanced with the subtle heat from pepper.

The technique of spatchcocking the chicken not only allows it to cook more quickly and evenly but also ensures the marinade penetrates deeply into the meat. Cooking it skin side up on the barbecue produces a beautifully tender chicken with crispy, golden-brown skin that’s hard to resist. Plus, the bold marinade paired with the smoky char from the grill creates an irresistible combination of flavors.

This dish is perfect for serving at lunch or as the star of your dinner table and serves four generously. It’s a dish that’s both satisfying and light, clocking in at just 430 calories per serving. To elevate the experience further, fresh coriander and lime wedges make the perfect garnish, adding a final burst of freshness that complements the savory meat beautifully.

If you want a deliciously simple yet impressive chicken recipe that’s perfect for entertaining or a family meal, this Lime & Coriander Chicken is definitely one to try. It’s a wonderful way to enjoy the fresh, tangy flavors of lime with the unmistakable aroma of coriander, making every bite a delight.

Ingredients

  • medium meat from a rotisserie chicken ( 1.6kg 3lb 8oz)
  •  garlic cloves
  • tbsp peppercorn black
  •  juice of lime cut into wedges, to serve
  • bunch coriander finely chopped

Equipment

  • knife
  • mortar and pestle
  • kitchen scissors
  • cutting board
  • cleaver

Directions

  1. First, spatchcock the chicken so that it will sit flat on the barbecue. All this means is using a pair of kitchen scissors or a sharp kitchen knife to cut down either side of the parsons nose to completely remove the backbone. Then, place the chicken, breast side up, on a chopping board and push down hard to flatten with your hands. Use a sharp knife to make lots of deep slashes in the chicken, about three in each breast and two in each leg.
  2. In a mortar and pestle, crush the garlic and peppercorns together to a grey, mushy paste. Stir the lime juice into the paste, then the chopped coriander.
  3. Put the chicken in a dish and massage the marinade into the chicken. Cover with cling film and refrigerate for at least 2 hours, but preferably overnight.
  4. To cook the chicken, fire up the barbecue. When the flames die down and the coals are hot and glowing, lay the chicken on the barbecue, skin side up, and sprinkle with salt. You will be tempted to keep prodding it and lifting it up, but leave it alone. After 25 mins, the chicken will look like its cooked through, but flip it over and give the skin side 10 mins to brown. Lift the chicken onto a chopping board and leave to rest for a few minutes.
  5. You can now carve conventionally but I like to get a cleaver and chop it straight down into thick slices. Pile it up on a platter and serve scattered with fresh coriander and lime wedges.
