  • cups coconut flakes unsweetened
  • large egg whites 
  • 0.3 teaspoon kosher salt 
  • tablespoon lime zest finely grated
  • 0.3 cup sugar

Directions

  1. Place racks in upper and lower thirds ofoven; preheat to 325°F.
  2. Whisk egg whitesand sugar in a large bowl just until frothy.
  3. Whisk in lime zest and salt.
  4. Add coconutand fold to coat.
  5. Drop heaping tablespoonfuls ofcoconut mixture onto 2 parchmentpaper-lined rimmed baking sheets.
  6. Bake, rotating pans halfway through fromtop to bottom and back to front, untilgolden brown, 18-22 minutes.
  7. Let cool onbaking sheets. DO AHEAD: Macaroons canbe made 1 day ahead. Store airtight atroom temperature.
