Ingredients

  • 12 ounce clams undrained chopped canned
  • 0.3 teaspoon pepper red crushed
  • 0.5 teaspoon thyme leaves dried
  • large eggs 
  • 0.3 cup parsley fresh chopped
  •  garlic clove minced
  • ounces pasta uncooked
  • 0.5 cup milk 2% reduced-fat
  • tablespoon olive oil 
  • 0.5 cup onion chopped
  • ounces parmesan cheese fresh grated

Directions

  1. Cook pasta according to package directions, omitting salt and fat; drain.
  2. While pasta cooks, heat oil in a large skillet over medium heat.
  3. Add onion, thyme, red pepper, and garlic; cook until onion is golden brown (about 6 minutes). Stir in undrained clams; bring to a boil.
  4. Add pasta to pan.
  5. Combine milk and egg in a small bowl; stir well with a whisk.
  6. Add milk mixture to pan; stir well. Cook over low heat 5 minutes until milk mixture is thick, stirring constantly (do not boil).
  7. Sprinkle mixture with cheese and parsley.
  8. Serve immediately.
