  • 0.5 cup cilantro leaves fresh
  • cup mint leaves mixed fresh
  • 0.3 cup juice of lime fresh
  • pound lobsters cooked
  • 10 cups greens mixed (such as arugula, baby spinach, and frisée)
  •  serrano chile seeded
  • 5.5 teaspoons sugar 
  • 0.8 cup coconut milk unsweetened canned
  • 0.3 cup vegetable oil 
  • tablespoons citrus champagne vinegar

Directions

  1. Puree all ingredients inprocessor. Cover and refrigerate. DO AHEAD:Can be made 4 hours ahead. Keep chilled.
  2. Crack lobster tails and claws andremove meat.
  3. Cut tail meat into 1/2-inch-thickmedallions; leave claw meat whole.
  4. Whisk oil and vinegar in small bowl.Season vinaigrette with salt and pepper.Toss greens with vinaigrette in largebowl. Divide salad among 4 plates.
  5. Toss lobster with 1/2 cup mint-limemixture; divide among plates.
  6. Garnish withmint, cilantro, and basil leaves.
  7. Serve, passingremaining mint-lime mixture separately.
