Ingredients

  • large eggs lightly beaten
  • 1.5 cups bean sprouts fresh
  •  garlic cloves minced
  • 1.5 cups cabbage green thinly sliced
  • 1.5 cups julienne-cut green onions ()
  • tablespoons soya sauce low-sodium
  • tablespoon oyster sauce 
  • ounce boned center-cut loin pork chops lean cut into 1/4-inch-wide strips ( 3/)
  • 0.5 teaspoon sugar 
  • pound udon noodles fresh thick uncooked (, round Japanese wheat noodles)
  • 1.5 teaspoons vegetable oil

Directions

  1. Combine first 3 ingredients in a bowl. Stir well; set aside.
  2. Cook noodles in boiling water 10 minutes (discard noodle seasoning packet).
  3. Drain; rinse under cold water. Set aside.
  4. Heat oil in a wok or large skillet coated with cooking spray over high heat until hot.
  5. Add pork and garlic, and stir-fry 2 minutes.
  6. Add soy sauce mixture, and stir-fry 30 seconds.
  7. Add egg, and stir-fry 30 seconds.
  8. Add cooked noodles, bean sprouts, sliced cabbage, and green onions; stir-fry 3 minutes or until vegetables wilt and udon noodles are thoroughly heated.
