Ingredients

  • tablespoon balsamic vinegar 
  • servings pepper black freshly ground to taste
  •  carrots shredded peeled
  • ounces cheddar cheese yellow sliced into slivers reduced-fat
  • oz chicken breast boneless skinless
  • small cucumber peeled thinly sliced
  • ounces swiss cheese low-fat sliced cut into slivers
  • tablespoon olive oil 
  •  radishes thinly sliced
  •  the of 1 cos lettuce ()
  • 0.1 teaspoon salt 
  • large tomatoes trimmed cut into 1/2-inch dice
  • strips at least of turkey bacon 
  • 0.5 ounce turkey pepperoni sliced cut into slivers

Directions

  1. Sprinkle chicken with salt and pepper on both sides. Cook over medium heat in a grill pan or gas grill, turning once, about 10 minutes total.
  2. Let chicken cool, and then cut into thin slices.
  3. Cut slices into slivers.
  4. Cook bacon in microwave until crisp; let cool completely on a paper towel.
  5. In a large salad bowl, combine Swiss cheese, Cheddar cheese, pepperoni, radish, tomato, cucumber and carrot.
  6. Add chicken, lettuce, oil and vinegar. Toss well, crumble bacon on top and toss again.
  7. Serve immediately.
