  • ounces bacon chopped ( 8 slices)
  • tablespoons butter 
  • 0.5  chipotles in adobo canned minced
  • 1.5 cups ears corn fresh
  •  garlic clove minced
  • 0.5 teaspoon pepper black
  •  onion chopped
  • servings parsley fresh
  •  bell pepper red chopped
  • teaspoon seafood seasoning 
  • 1.5 pounds shrimp deveined peeled
  • cups vegetable stock 
  • 1.5 pounds yukon gold potatoes cubed ( 4 medium)

Directions

  1. Cook bacon in a large (8-quart) soup pot over medium heat, stirring occasionally, until crisp.
  2. Remove bacon from pot with a slotted spoon, reserving 1 teaspoon drippings in pot; set bacon aside.
  3. Add butter to bacon drippings in pot, and melt butter over medium heat.
  4. Add onion and next 4 ingredients; cook 10 minutes, stirring frequently.
  5. Stir in broth, potatoes, and chile. Bring to a boil; reduce heat, and simmer 20 minutes or until potatoes are tender. Stir in corn and shrimp; cook 3 minutes or until shrimp are just cooked through. Stir in reserved bacon. Adjust seasonings, if necessary.
  6. Garnish, if desired.
