Ingredients

  •  avocado pitted peeled cut lengthwise into 1/4-inch-thick strips
  • 10 cups baby spinach loosely packed ()
  • 6-inch diameter corn tortillas cut into 3 x 1/2-inch strips
  • 1.5 teaspoons honey 
  • tablespoons juice of lime fresh
  • 0.3 cup olive oil extra-virgin
  • tablespoon shallots chopped

Directions

  1. Heat 1/4 cup oil in heavy large skillet over medium-high heat. Working in batches, fry tortilla strips until golden, about 2 minutes.
  2. Transfer to paper towels.
  3. Sprinkle with salt.
  4. Whisk lime juice, shallot, and honey in small bowl.
  5. Whisk in 3 tablespoons oil. Season with salt and pepper. DO AHEAD Can be made 1 day ahead. Cool strips completely and store in airtight container at room temperature. Cover and chill dressing.
  6. Place mâche and avocado in large bowl.
  7. Add dressing; toss. Season with salt and pepper. Top with tortilla strips.
