  • teaspoon dijon mustard 
  • large yolk from a hardboiled egg 
  • 16 cups lambs lettuce loosely packed (lamb's lettuce; see above)
  • 0.3 cup olive oil 
  • 0.3 teaspoon salt 
  • 2.8 teaspoons white-wine vinegar

Directions

  1. Crumble yolk into a blender, then add vinegar, mustard, salt, and pepper and blend until combined well. With motor running, add oil in a slow stream, blending until combined well.
  2. Toss mâche with vinaigrette just before serving.
