Ingredients

  • 4.5 ounce mushrooms drained chopped canned
  • 10.8 ounce cream of mushroom soup canned
  • 2.5 cups seasoned croutons 
  • 0.3 teaspoon mustard dry
  •  eggs 
  • sprigs parsley fresh for garnish
  • 2.3 cups milk 
  • cup monterrey jack cheese shredded
  • pound spicy pork sausage 
  • cup sharp cheddar cheese shredded
  • 10 ounce spinach - frozen dry thawed drained chopped

Directions

  1. Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally.
  2. Drain off any drippings.
  3. Spread sausage over croutons.
  4. In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard.
  5. Pour egg mixture over sausage and croutons. Refrigerate overnight.
  6. The next morning, preheat oven to 325 degrees F (165 degrees C).
  7. Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top.
  8. Garnish with parsley sprigs and serve hot.
