Ingredients

  •  carrots halved lengthwise cut into 1/4-inch slices
  • 2.5 pounds chicken breast halves bone-in
  •  garlic clove minced
  • tablespoons juice of lemon fresh
  • cups chicken broth low-sodium
  • tablespoon olive oil 
  • 1.5 cups onion chopped
  •  parsnips halved lengthwise cut into 1/4-inch slices
  • 0.3 teaspoon pepper freshly ground
  •  celery stalks chopped
  • teaspoon salt

Directions

  1. Heat oil in a large pot.
  2. Add parsnip and next 6 ingredients, and saut about 5 minutes.
  3. Add broth and chicken, and bring to a boil. Reduce heat, and simmer 35 minutes.
  4. Remove chicken from bone, and cut meat into bite-size pieces. Return chicken to pot, add lemon juice, and heat through.
