  •  bay leaf 
  • 0.5 cup cooking wine dry white
  •  garlic clove pressed
  • tablespoon juice of lime fresh
  • teaspoons olive oil 
  • tablespoons onion diced
  • 0.5 teaspoon salt 
  • 0.8 cup water 
  • cup mamey peeled seeded chopped
  • cup mamey peeled seeded chopped

Directions

  1. Heat oil in a saucepan over medium heat until hot. Saut mamey, onion, and garlic 5 minutes.
  2. Add water, wine, and bay leaf; bring to a boil. Reduce heat and simmer, uncovered, 10 minutes or until tender.
  3. Remove and discard bay leaf.
  4. Pour mixture into a food processor or blender, cover, and process until smooth.
  5. Pour through a wire-mesh strainer into a bowl; stir in lime juice and salt.
