Ingredients

  • ounces water chestnuts drained sliced canned
  • cups rice cold cooked
  • 0.5 teaspoon cornstarch 
  • ounces mushrooms fresh sliced
  •  garlic clove finely chopped
  • tablespoon ginger finely chopped
  • tablespoons spring onion sliced
  • teaspoons soy sauce reduced-sodium
  • pound mangos diced peeled
  • cup peas green frozen thawed
  • 0.1 teaspoon pepper 
  • 0.8 cup pork diced cooked

Directions

  1. Mix pork and cornstarch. Spray nonstick wok or 12-inch skillet with cooking spray; heat over medium-high heat until cooking spray starts to bubble.
  2. Add pork, mango, water chestnuts, mushrooms, gingerroot and garlic; stir-fry 1 minute.
  3. Remove pork mixture from wok.
  4. Spray wok or skillet with cooking spray; heat until cooking spray starts to bubble.
  5. Add rice; stir-fry about 1 minute or until rice is hot. Stir in soy sauce.
  6. Add pork mixture, peas, onions and pepper; stir-fry 1 minute.
