  • 0.3 cup basil fresh whole chopped
  • large mangos peeled halved thinly sliced
  • 8.3 inch mozzarella fresh (from one 8-ounce ball)
  • tablespoons olive oil extra virgin extra-virgin
  •  radicchio thinly thick ends trimmed
  • tablespoons balsamic vinegar white

    1. Blend chopped basil, oil, and vinegar in miniprocessor until most of basil is pureed. Season with salt and pepper.
    2. Overlap radicchio, mangoes, cheese, and basil leaves on plates.
    3. Drizzle with vinaigrette.
    4. Serve, passing remaining vinaigrette.
