Ingredients

  • slices bacon 
  •  cinnamon sticks 
  • tablespoon candied ginger finely chopped
  • tablespoon juice of lemon fresh
  • tablespoons maple sugar divided
  • 0.8 cup maple syrup pure (preferably Grade B)
  • 0.5 cup pecans toasted
  • servings whipped cream

Directions

  1. Preheat oven to 400°F. Line rimmedbaking sheet with foil.
  2. Place rack in centerof foil.
  3. Lay bacon slices on rack.
  4. Sprinkle1 tablespoon maple sugar evenly overbacon.
  5. Bake until sugar is melted, about8 minutes.
  6. Sprinkle remaining 1 tablespoonsugar over same side of bacon.
  7. Bake untilbacon is deep brown and glazed, 12 to14 minutes longer.
  8. Remove from oven.
  9. Preheat broiler. Broil bacon until sugaron top bubbles thickly, watching closely toprevent burning, 1 to 2 minutes. Cool baconcompletely on rack.
  10. Cut into 1/4-inch dice.
  11. Combine maple syrup and cinnamonsticks in deep medium saucepan and bringto boil over medium-high heat. Reduceheat to medium and simmer until sauceis thickened and reduced to 1/2 to 2/3 cup,about 5 minutes.
  12. Remove cinnamon sticks.
  13. Mix lemon juice and ginger into sauce.DO AHEAD: Can be made 2 hours ahead.
  14. Letstand at room temperature.
  15. Stir pecans and bacon into maple sauce.Scoop ice cream into dessert dishes. Spoonsauce over and serve.
