Ingredients

  • 0.5 cup balsamic vinegar 
  • 15 ounce black beans canned
  • 15 ounce chickpeas canned (garbanzo beans)
  • 16 ounce kidney beans canned
  • cup whole-kernel corn frozen
  • tablespoons dijon mustard 
  • tablespoon basil dried
  • teaspoon thyme leaves dried
  •  garlic cloves minced
  • cup cut green beans frozen
  • 0.3 teaspoon ground pepper white
  • tablespoon olive oil 
  • cup onion diced red
  • 0.3 teaspoon salt 
  • teaspoon sugar 
  • 0.3 cup water

Directions

  1. Combine the first 5 ingredients in a colander; rinse and drain.
  2. Combine onion and remaining ingredients in a bowl; add corn and beans, tossing gently to coat. Cover and marinate in refrigerator at least 4 hours, stirring occasionally.
  3. Serve with a slotted spoon.
