  • 2.5 cups cucumber english peeled thinly sliced
  • tablespoons flat-leaf parsley fresh finely chopped
  • 0.3 teaspoon salt 
  • 0.3 cup sugar 
  • tablespoons water 
  • 0.3 teaspoon pepper white
  • 0.5 cup citrus champagne vinegar 
  • tablespoon or dried fresh chopped

Directions

  1. Place cucumber slices and salt in a large bowl; add water to cover.
  2. Let stand 1 hour; rinse.
  3. Drain well; blot dry with paper towels.
  4. Combine vinegar and remaining ingredients in a large bowl.
  5. Add cucumber; toss gently to coat. Cover and chill at least 4 hours.
