  • teaspoon dijon mustard 
  • tablespoon parsley fresh minced
  •  garlic clove minced
  • pounds green beans trimmed
  • 0.3 teaspoon pepper freshly ground
  • small onion red thinly sliced
  • teaspoon salt 
  • 0.5 cup vegetable oil 
  • tablespoons vinegar white

    Directions

    1. Cook beans in boiling water to cover for 6 minutes or until crisp tender; drain.
    2. Plunge in ice water to stop the cooking process; drain and set aside.
    3. Combine beans and onion; toss gently.
    4. Combine oil through garlic in a jar; cover tightly, and shake vigorously.
    5. Pour over bean mixture; toss gently to coat.
    6. Cover, and chill 2 hours.
