Ingredients

  • ounce feta cheese crumbled
  • pounds green beans fresh trimmed
  •  garlic cloves minced
  • cup kalamata olives sliced
  • 0.3 cup olive oil 
  • 10 servings garnish: oregano sprigs fresh
  • tablespoon oregano fresh finely chopped
  • 0.3 teaspoon pepper 
  • tablespoons red wine vinegar 
  • 1.5 teaspoons salt divided
  •  tomatoes seeded chopped

Directions

  1. Place beans in boiling water seasoned with 1 teaspoon salt; cook 6 to 8 minutes or until crisp-tender.
  2. Drain. Plunge beans into ice water to stop the cooking process.
  3. Place in a shallow serving dish.
  4. Cook garlic in hot oil in a skillet over medium heat 30 seconds or just until fragrant; remove from heat. Stir in olives, next 4 ingredients, and remaining 1/2 teaspoon salt.
  5. Pour mixture over beans, tossing to coat. Chill at least 3 hours or overnight.
  6. Sprinkle with feta cheese.
  7. Garnish, if desired.
