Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 0.3 cup cilantro leaves fresh finely chopped
  • tablespoons flat-leaf parsley fresh finely chopped
  •  garlic cloves minced
  • 0.5 teaspoon ground coriander 
  • ounce lamb loin chops trimmed
  • tablespoons juice of lemon fresh
  • tablespoon olive oil extra-virgin
  • tablespoons onion minced
  • 0.3 teaspoon salt 
  • 0.8 teaspoon paprika smoked

Directions

  1. Combine first 8 ingredients in a large zip-top plastic bag.
  2. Add lamb; seal and marinate in refrigerator 8 hours or overnight.
  3. Preheat oven to 45
  4. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  5. Remove lamb from bag, and discard marinade.
  6. Sprinkle both sides of lamb evenly with salt and black pepper.
  7. Add half of lamb to skillet, and saut for 2 minutes or until browned.
  8. Transfer lamb, browned side up, to a broiler pan coated with cooking spray. Repeat procedure with remaining lamb.
  9. Bake lamb at 450 for 6 minutes or until desired degree of doneness.
