Marinated Picholine Olives are a delightful and flavorful side dish that can elevate any gathering or meal. Known for their bold, tangy taste, Picholine olives are brine-cured small green olives that absorb the aromatic spices and zests during the marination process, creating a memorable culinary experience. This vegetarian, vegan, gluten-free, and dairy-free recipe is perfect for those who appreciate the finer flavors of Mediterranean cuisine.

The magic begins with a simmer of garlic in olive oil, which complements the sweetness of brown sugar and the acidity of white-wine vinegar. Adding layers of flavor through fragrant cinnamon, fresh citrus zests, and the gentle heat of pink peppercorns makes each bite a delightful exploration of taste. Coupled with slivers of shallot and the earthy notes of bay leaves and allspice, these olives turn into an exquisite tasting experience that resonates long after the first bite.

What’s more, the olives can be prepared ahead of time, allowing them to marinate in the spices for a full 24 hours or even up to five days, ensuring they are bursting with flavor when served. Whether you’re hosting a dinner party, enjoying a casual get-together, or looking for a unique snack, Marinated Picholine Olives are sure to impress your guests and encourage conversation around the table. Dive into this gourmet treat, and let your taste buds embark on a journey through the sun-kissed regions of the Mediterranean!

Ingredients

  • stick cinnamon (3-inch)
  • tablespoon brown sugar dark packed
  • large garlic cloves thinly sliced lengthwise
  • inch lemon zest fresh
  • 0.5 cup olive oil
  • inch orange zest fresh
  • teaspoon pink peppercorns whole crushed
  • large shallots thinly sliced lengthwise
  •  turkish bay leaf
  • 0.5 cup white-wine vinegar
  • 0.3 teaspoon allspice whole with flat side of a large heavy knife crushed
  • 0.8 pounds picholine whole green

Equipment

  • bowl
  • frying pan
  • sauce pan
  • slotted spoon

Directions

  1. Cook garlic in 2 tablespoons oil in a small heavy skillet over moderate heat, stirring, until pale golden, about 30 seconds.
  2. Transfer garlic with a slotted spoon to a small bowl and reserve oil separately (to prevent garlic from continuing to brown in hot oil).
  3. Simmer 1/4 cup vinegar with shallot and brown sugar in a 1-quart heavy saucepan, uncovered, stirring occasionally, until liquid is reduced to about 1 tablespoon, about 4 minutes.
  4. Add garlic, garlic oil, remaining 1/2 cup olive oil, remaining 1/4 cup vinegar, spices, bay leaves, zests, and olives and bring to a simmer.
  5. Transfer mixture to a bowl and cool to warm. Marinate olives, covered and chilled, at least 24 hours.
  6. If desired, reheat in saucepan over low heat, stirring until warm.
  7. Transfer with a slotted spoon to a serving dish.
  8. Olives can marinate up to 5 days.
