If you’re looking for a pork roast that delivers both comfort and sophistication, this Marmalade Glazed Pork Roast is a dish that immediately captures attention. It brings together the natural richness of a tender boneless pork loin with the bright, citrusy sweetness of orange marmalade, creating a glaze that caramelizes beautifully in the oven. The rosemary adds a fragrant herbal note that balances the sweetness, giving the roast a wonderfully rounded flavor profile.

What makes this recipe especially appealing is how effortlessly it transforms simple ingredients into a memorable meal. The parsnips and red onions roast alongside the pork, soaking up the pan juices and developing deep, golden edges that make every bite satisfying. With a health score of 84 and naturally gluten-free and dairy-free qualities, it’s a wholesome option that doesn’t compromise on taste.

Perfect for a cozy family dinner or a special gathering, this roast offers a delightful mix of sweet, savory, and aromatic elements. In just 70 minutes, you’ll have a centerpiece that looks impressive and tastes even better. The final touch—thickened pan juices drizzled over tender slices of pork—makes this dish feel like something you’d proudly serve for any occasion.

Ingredients

  • 2.5 pound pork loin roast boneless
  • tablespoon rosemary fresh chopped
  • servings salt and ground pepper black to taste
  • tablespoon olive oil
  • 0.5 cup orange juice
  • 0.5 cup orange marmalade divided
  • pound parsnips peeled cut into 1-inch wedges
  •  onions red cut into 1-inch wedges

Equipment

  • bowl
  • oven
  • roasting pan
  • kitchen thermometer
  • aluminum foil
  • cutting board

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place pork roast in a large roasting pan and season liberally with salt and black pepper.
  3. Spread half the orange marmalade over the roast; mix the remaining marmalade with rosemary in a large bowl. Stir orange juice and olive oil into rosemary mixture.
  4. Combine parsnips and onions in another bowl.
  5. Add about 2 tablespoons orange marmalade mixture; toss to coat. Arrange vegetables around pork roast.
  6. Bake pork in preheated oven for 30 to 45 minutes.
  7. Pour remaining orange juice mixture over pork. Increase oven heat to 450 degrees F (230 degrees C) and continue to cook until pork is slightly pink in the center, 15 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  8. Transfer roast to a cutting board and cover lightly with aluminum foil. Toss vegetables in pan juices and return roasting pan to oven. Continue cooking until juices have thickened and vegetables are browned, about 10 minutes more. Slice pork and serve with vegetables and pan juices.
