Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • tablespoons butter softened
  • 1.5 teaspoons cumin seeds toasted
  • tablespoons cilantro leaves fresh finely chopped
  • 0.5 teaspoon ground cumin 
  • teaspoons juice of lime fresh
  • 0.8 cup buttermilk low-fat
  • 0.8 teaspoon salt 
  • tablespoons shallots finely chopped
  • 2.5 pounds yukon gold potatoes peeled quartered

Directions

  1. Combine first 6 ingredients in a small bowl. Mash with a fork until blended. Cover and refrigerate.
  2. Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat, and simmer 20 minutes or until tender; drain. Return potatoes to pan.
  3. Add buttermilk, salt, and pepper; beat with a mixer at medium speed until smooth.
  4. Serve with butter mixture.
