Ingredients

  • tablespoon chives fresh chopped
  • tablespoon parsley fresh chopped
  • tablespoon thyme leaves fresh chopped
  • 10 ounce goat cheese soft
  • cup milk 
  • teaspoon olive oil 
  • 0.3 teaspoon pepper freshly ground
  • 2.5 pounds round potatoes red
  • 0.8 teaspoon salt 
  • 0.8 cup shallots chopped ( 4 large)
  • sprigs garnishes: thyme parsley sprigs fresh

Equipment

  • potato masher

Directions

  1. Cook shallot in oil in a large skillet over medium heat 4 to 5 minutes or until tender and golden. Set aside.
  2. Cook potatoes in boiling water to cover 30 to 35 minutes or until tender.
  3. Let cool 5 minutes. Peel and mash potatoes with a potato masher. (Do not use a food processor.)
  4. Heat milk in a small saucepan until warm; add milk to potato. Stir in shallot, goat cheese, and next 5 ingredients. Spoon into a serving dish.
  5. Garnish, if desired.
