Ingredients

  • large eggs lightly beaten
  • 0.5 cup golden raisins dried chopped
  • 0.5 teaspoon ground cinnamon 
  • 0.5 cup honey 
  • 10 ounce matzoh plain
  • 0.5 cup sugar 
  • teaspoon vanilla extract 
  • 15 servings vegetable oil 
  • cup walnuts toasted chopped
  • 2.3 cups water

Directions

  1. Break matzoh into pieces, and place in a large bowl. Cover with 2 1/4 cups water; let stand 5 minutes or until matzoh is softened.
  2. Add eggs and next 4 ingredients, stirring until blended.
  3. Pour oil to a depth of 2 inches into a large skillet, and heat to 37
  4. Drop batter by 1/4 cupfuls into hot oil; fry, in batches, 2 minutes on each side or until golden and done in center.
  5. Drain on paper towels.
  6. Arrange fritters on a serving platter.
  7. Drizzle evenly with honey; sprinkle with walnuts.
  8. Serve immediately.
