Ingredients

  • 0.3 cup apple cider vinegar 
  • 14.5 ounce canned tomatoes with added puree crushed canned
  • 0.5 cup celery leaves chopped
  • cup cracker crumbs crushed
  • 0.3 cup wine dry white
  • large eggs 
  •  garlic clove minced
  • 0.8 teaspoon pepper black
  • pound ground pork 
  • pound ground beef lean
  • pound mushrooms sliced
  • tablespoons olive oil 
  • large onion coarsely chopped
  • teaspoons oregano dried
  • 1.5 teaspoons salt 
  • tablespoon sugar

Directions

  1. Preheat oven to 350°F. Oil 13x9x2-inch roasting pan.
  2. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat.
  3. Add onions and sugar; sauté until onions are deep golden brown, about 15 minutes. Stir in oregano and garlic.
  4. Add vinegar; cook until evaporated, about 2 minutes.
  5. Transfer to large bowl and cool.
  6. Add ground beef, pork, 1 cup crushed tomatoes and next 6 ingredients to onions.
  7. Mix with fork until just blended. Form meat mixture into 10-by-5-inch loaf shape in prepared pan.
  8. Bake 45 minutes.
  9. Spread remaining crushed tomatoes over meat loaf.
  10. Drizzle with 1 tablespoon oil.
  11. Bake until thermometer inserted into center registers 155°F, about 1 hour. Cool 15 minutes.
  12. Meanwhile, heat 2 tablespoons oil in large skillet over medium-high heat.
  13. Add mushrooms; sauté until tender, about 12 minutes. Season to taste with salt and pepper.
  14. Cut meat loaf into thick slices. Spoon mushrooms and pan juices over.
