Ingredients

  • 1.5 lb potatoes - remove skin red cut in half
  • slices bacon 
  • 0.8 cup grape tomatoes red yellow
  • 0.3 cup onion chopped
  • 0.3 cup olives ripe sliced
  • 0.5 cup salad dressing fat-free italian
  • tablespoon apple cider vinegar 
  • tablespoon parsley fresh italian chopped

Equipment

  • paper towels
  • sauce pan
  • microwave

Directions

  1. In 3-quart saucepan, heat 1 inch water to boiling.
  2. Add potatoes. Cover and heat to boiling; reduce heat. Cover and simmer 10 to 15 minutes or until tender; drain. Cool slightly.
  3. Cut potatoes into 3/4-inch cubes; place in large bowl.
  4. Meanwhile, line microwavable plate with microwavable paper towel.
  5. Place bacon on paper towel; top with another microwavable paper towel. Microwave on High 2 to 3 minutes or until bacon is crisp. Crumble bacon.
  6. Stir bacon, tomatoes, onion and olives into warm cubed potatoes. In small bowl, mix dressing and vinegar; pour over potato mixture, stirring gently to coat vegetables.
  7. Sprinkle with parsley.
  8. Serve warm or cool.
