Ingredients

  • 0.3 cup basil leaves 
  • teaspoon pepper black freshly ground
  • ounce bread french sliced
  • 0.3 cup flat-leaf parsley fresh chopped
  • 0.5 cup olives green pitted chopped
  • tablespoons juice of lemon fresh
  • cups salad greens mixed
  • 1.5 tablespoons olive oil 
  • cup plum tomatoes diced
  • tablespoons onion red finely chopped
  • pound shrimp cooked peeled

Equipment

Directions

  1. Place first 5 ingredients in a blender or food processor, and pulse several times or until well-blended.
  2. Place 1/2 cup olive mixture in a large bowl; add shrimp, and toss to coat.
  3. Add remaining olive mixture to salad greens; toss to coat. Divide greens evenly among 4 plates, and top with shrimp mixture and tomato.
  4. Sprinkle with parsley and pepper.
  5. Serve with bread.
