Ingredients

  • ounces asiago cheese divided grated
  • 14 ounce baby spinach 
  • 0.5 teaspoon pepper black divided
  • 16 ounce bread french 1-inch-thick cut into slices
  • tablespoons dijon mustard 
  • large egg whites lightly beaten
  • large eggs lightly beaten
  • cups skim milk fat-free
  • ounce feta cheese crumbled
  • tablespoon flour all-purpose
  •  garlic clove minced
  • ounce mushrooms 
  • cup onion chopped
  • 1.5 teaspoons oregano dried
  • pound plum tomatoes thinly sliced
  • 0.5 teaspoon salt divided

Directions

  1. Preheat oven to 35
  2. Place bread slices in a single layer on a baking sheet.
  3. Bake at 350 for 12 minutes or until lightly browned.
  4. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  5. Add onion, garlic, and mushrooms; saut 5 minutes or until tender.
  6. Sprinkle flour over mushroom mixture; cook 1 minute, stirring constantly.
  7. Add 1 bag of spinach; cook 3 minutes or until spinach wilts.
  8. Add remaining spinach; cook 3 minutes or until spinach wilts. Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper.
  9. Place half of bread slices in bottom of a 13 x 9-inch baking dish coated with cooking spray.
  10. Spread spinach mixture over bread. Top with tomato slices; sprinkle evenly with feta and half of Asiago cheese. Arrange remaining bread slices over cheese.
  11. Combine 1/4 teaspoon salt, 1/4 teaspoon pepper, milk, and remaining ingredients, stirring well with a whisk.
  12. Pour over bread; sprinkle with remaining Asiago cheese. Cover and chill 8 hours or overnight.
  13. Preheat oven to 35
  14. Uncover strata; bake at 350 for 40 minutes or until lightly browned and set.
  15. Serve warm.
