  • 1.5 tablespoons honey 
  • cups wedges honeydew melon seeded sliced
  • 0.3 teaspoon kosher salt 
  • tablespoons juice of lemon fresh
  • 0.3 cup mint leaves fresh
  •  nectarines pitted ripe sliced
  • tablespoons olive oil 
  • 0.3 cup onion red vertically sliced
  • 0.5 ounce pecorino cheese shaved
  • ounces pancetta very thinly sliced
  •  serrano chiles very thinly sliced
  • cups watermelon seeded sliced
