Ingredients

  • slices oscar mayer bacon cut into 1-inch pieces
  • Tbsp cilantro leaves fresh chopped
  •  green onion sliced
  •  jalapeão pepper minced seeded
  • oz queso quesadilla cheese shredded with a touch of philadelphia kraft
  • large tomatoes chopped

Equipment

  • frying pan
  • paper towels
  • slotted spoon

Directions

  1. Cook and stir bacon in large skillet on medium heat until crisp.
  2. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  3. Add tomatoes and peppers to reserved drippings in skillet; cook and stir 3 min. or until tomatoes are softened and most the liquid is cooked off. Stir in cheese; cook and stir 1 min. or until melted.
  4. Spoon into shallow serving dish; top with bacon, onions and cilantro.
