Ingredients

  • 250 rice 
  • 250 ml salsa homemade (see related recipes)
  • 600 ml chicken stock see 
  • servings cilantro leaves

Directions

  1. In a medium saucepan, combine basmati rice and salsa.
  2. Heat for 2-3 mins, then add stock.
  3. Mix together, bring to the boil, then cover and simmer over a very low heat. Cook for 10-12 mins or until the rice is tender.
  4. Serve scattered with coriander.
