Ingredients

  • 14.5 ounce canned tomatoes coarsely chopped canned
  • pound chicken breast tenders 
  • tablespoon chili powder 
  • cups rice long-grain hot cooked
  • cup onion frozen chopped
  • 16 ounce pepper stir-fry frozen ()
  • cup salsa 
  • tablespoons mexican seasoning salt-free
  • tablespoon sugar

Directions

  1. Combine first 3 ingredients in a small bowl.
  2. Combine salsa and tomatoes.
  3. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot.
  4. Add chicken, and sprinkle evenly with chili powder mixture. Top with pepper stir-fry and onion.
  5. Pour salsa mixture evenly over top. Bring to a boil; cover and reduce heat. Simmer 10 minutes or until chicken is done.
  6. Serve over cooked rice.
