Ingredients

  • cups carrots coarsely chopped ( 4 medium)
  • stick cinnamon (3-inch)
  • 2.5 tablespoons olive oil extravirgin
  • tablespoons cilantro leaves fresh finely chopped
  • tablespoons parsley fresh finely chopped
  •  garlic clove minced
  • 0.5 teaspoon ground cumin 
  • cup israeli couscous uncooked
  • tablespoon juice of lemon fresh
  • 0.3 teaspoon lemon rind grated
  • 0.8 teaspoon salt 
  • 2.3 cups water

Directions

  1. Combine first 4 ingredients in a large saucepan; bring to a boil. Cook 10 minutes or until carrot and couscous are tender.
  2. Drain; discard cinnamon stick.
  3. Combine couscous mixture, cilantro, and remaining ingredients in a large bowl; toss gently to coat.
