  • cloves garlic finely chopped
  • 0.5 cup onion chopped
  • cups zucchini chopped
  • cup carrots sliced
  • cup celery stalks chopped
  • 28 oz canned tomatoes diced organic undrained canned
  • 32 oz chicken broth (4 cups)
  • cups sacremento tomato juice 
  • cup wine dry red
  • tablespoon basil dried
  • teaspoon salt 
  • 0.5 teaspoon oregano dried
  • 0.3 teaspoon pepper 
  • cups mostaccioli pasta uncooked

Directions

  1. Spray 8-quart nonstick Dutch oven with cooking spray; heat over medium heat.
  2. Add garlic and onion; cook about 2 minutes, stirring occasionally, until onion is tender.
  3. Stir in remaining ingredients except pasta.
  4. Heat to boiling. Reduce heat; cover and simmer 45 minutes.
  5. Heat to boiling. Stir in pasta. Return to boiling. Reduce heat; simmer uncovered 10 to 15 minutes or until pasta is tender.
