Ingredients

  • rib celery stalks thinly sliced
  • large eggs 
  • tablespoons parsley fresh chopped
  • 12 ounces ham lean chopped
  • tablespoon juice of lemon 
  • 0.3 cup mayonnaise 
  • 0.3 cup pickle relish sweet
  • 12 slices sandwich bread whole-wheat white thin

Equipment

Directions

  1. Place eggs in a pan; cover with cold water. Bring to a boil.
  2. Remove from heat, cover and let stand for 12 minutes. Rinse with cold water until eggs are cool, peel eggs and chop.
  3. Place in a large bowl.
  4. Add ham, relish, celery and parsley to bowl with eggs. Gently stir in lemon juice and mayonnaise until blended.
  5. Spread 6 slices of bread with about 1/3 cup each of ham mixture. Top with remaining bread slices and press to adhere.
  6. Cut sandwiches diagonally into triangles, then cut each in half.
