Ingredients

  • large egg whites 
  • large eggs 
  • tablespoon half-and-half 
  • tablespoons milk 1%
  • tablespoon olive oil extra-virgin
  • 0.3 cup onion diced
  • 0.1 teaspoon pepper 
  • 0.5 teaspoon salt 
  • tablespoons scallions thinly sliced for garnish
  • ounces salmon smoked cut into 1/4-inch pieces

Directions

  1. Preheat oven to 32
  2. Heat oil in a nonstick skillet. Saut onion 23 minutes or until soft; add salt, pepper, and salmon.
  3. Remove from stovetop; let cool.
  4. Combine the next 4 ingredients (through milk) in a bowl. Stir in the cream cheese. Lightly coat 6 (8-ounce) ramekins with cooking spray.
  5. Add 2 tablespoons of salmon mixture to each ramekin.
  6. Pour 3/4 cup egg mixture into each ramekin. (Do not overfill.)
  7. Place ramekins on baking sheet; bake 25 minutes or until a wooden pick inserted in center comes out clean.
  8. Garnish, if desired.
