  • 1.5 cups couscous plain instant uncooked

  • teaspoon kosher salt 
  • tablespoon juice of lemon 
  • tablespoons olive oil 
  • cup tomatoes chopped
  • medium zucchini halved lengthwise thinly sliced ( and , 2 cups)
