  • cups carrots diagonally sliced ()
  • tablespoon mint leaves fresh chopped
  • tablespoons parsley fresh chopped
  •  garlic clove minced
  • tablespoons juice of lemon fresh
  • teaspoons olive oil 
  • tablespoons onion chopped
  • 0.3 teaspoon pepper 
  • tablespoon pinenuts toasted
  • tablespoons raisins 
  • 0.3 teaspoon salt 
  • 0.3 cup sherry vinegar

Directions

  1. Drop carrot into a large saucepan of boiling water; return to a boil.
  2. Drain and rinse under cold water.
  3. Combine vinegar and next 5 ingredients (vinegar through garlic) in a medium bowl, and stir with a whisk until blended.
  4. Add carrot, raisins, onion, parsley, and pine nuts; toss gently. Cover and chill. Stir in mint before serving.
