  • 0.3 cup less-sodium chicken broth fat-free
  • tablespoon mint leaves fresh chopped
  •  garlic cloves minced
  • teaspoons juice of lemon fresh
  • 0.3 teaspoon lemon rind fresh grated
  • 0.3 cup onion finely chopped ()
  • 16 ounce peas green frozen
  • 0.5 cup pancetta thinly sliced coarsely chopped
  • 0.1 teaspoon salt

Directions

  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  2. Add prosciutto, and cook 3 minutes, stirring frequently.
  3. Add onion and garlic; saut 2 minutes or until tender.
  4. Add peas and broth; cook 4 minutes or until peas are thoroughly heated.
  5. Remove from heat; stir in mint and remaining ingredients.
