Ingredients

  • 0.3 cup sugar 
  • tablespoons water 
  • 0.5 teaspoon lime zest grated
  • tablespoons juice of lime 
  • cups wedges honeydew melon 
  • tablespoons candied ginger finely chopped
  • cups strawberries fresh halved
  • serving lime zest grated

Directions

  1. In 1-quart saucepan, heat sugar and water to boiling.
  2. Remove from heat; stir in 1/2 teaspoon lime peel and the lime juice. Cool 10 minutes.
  3. In medium bowl, place melon and ginger.
  4. Pour sugar mixture over melon mixture. Cover; refrigerate about 1 hour to blend flavors.
  5. Just before serving, stir strawberries into melon mixture.
  6. Serve garnished with additional lime peel.
