  • cup carrots shredded ( 2)
  •  garlic clove minced
  • 12 cups the salad mixed
  • tablespoon olive oil extra virgin extra-virgin
  • 0.3 teaspoon salt 
  • 0.3 cup sun-dried olives packed ( 6)
  • cup canned tomatoes peeled seeded chopped
  • 0.5 cup water boiling

Directions

  1. Combine sun-dried tomatoes and boiling water in a bowl; let stand 30 minutes.
  2. Drain, reserving water; chop sun-dried tomatoes.
  3. Combine sun-dried tomatoes, 1 cup chopped tomato, vinegar, and garlic in a blender; process until smooth.
  4. Add reserved tomato liquid, oil, salt, and pepper; process until smooth.
  5. Combine greens and carrot in a large bowl; add vinaigrette. tossing well.
