  • cup cherry tomatoes 
  •  cucumber sliced
  • tablespoon ginger fresh minced
  •  garlic cloves chopped
  • 0.5 cup olive oil 
  • head radicchio thinly separated
  • 0.5  onion red thinly sliced
  • 0.5 cup red wine 
  • 0.5 cup red wine vinegar 
  • 12 cups gourmet salad greens mixed
  • 0.5 teaspoon salt 
  • 0.5 teaspoon sugar

Directions

  1. Grind first 4 ingredients to a paste with a mortar and pestle.
  2. Whisk together garlic mixture, wine, vinegar, and oil.
  3. Let stand 2 to 3 hours to blend flavors.
  4. Toss together salad greens and next 4 ingredients in a large bowl.
  5. Drizzle with vinaigrette; toss gently.
  6. Note: To make salad dressing in a blender, process first 6 ingredients until smooth, stopping to scrape down sides. Turn blender on high; gradually add oil in a slow, steady stream until blended.
