Ingredients

  •  chicken breast halves with skin and bones ( 5 pounds)
  • tablespoon kosher salt 
  • 0.5 cup mint leaves fresh finely chopped
  • 0.5 cup rum light
  • 0.8 cup juice of lime fresh
  • large lime quartered
  • servings mint leaves fresh
  • tablespoons mint leaves 
  • tablespoon vegetable oil

Directions

  1. Whisk lime juice, 1/2 cup rum, and next 4 ingredients in bowl.
  2. Place chicken in resealable plastic bag.
  3. Pour marinade over; seal bag. Turn bag to distribute marinade. Chill 4 hours, turning bag twice.
  4. Place lime quarters in shallow bowl.
  5. Pour remaining 2 tablespoons rum over, tossing to coat.
  6. Let stand at room temperature.
  7. Prepare barbecue (medium heat). Grill chicken until cooked through, about 15 minutes per side.
  8. Transfer to platter.
  9. Grill limes until soft and slightly charred, about 5 minutes.
  10. Garnish platter with mint sprigs. Squeeze grilled limes over chicken and serve.
  11. Mint syrup is often shelved with the coffee and tea at the supermarket.
