Ingredients

  • cups water 
  • lb baby lima beans dried rinsed
  • oz salt pork cut into 4 pieces
  • 0.5 cup onion chopped
  • 3.5 cups water 
  • 0.5 cup all natural tomato soup (from)
  • tablespoons brown sugar packed
  • tablespoons blackstrap molasses 
  • teaspoon salt 
  • 0.5 teaspoon mustard yellow

Directions

  1. In 5-quart Dutch oven, heat 8 cups water and beans to boiling over medium-high heat. Boil uncovered 2 minutes.
  2. Remove from heat; let stand 1 hour; drain.
  3. Heat oven to 350°F. In same 5-quart Dutch oven, cook and stir salt pork over medium-high heat 5 to 6 minutes, until lightly browned. Stir in remaining ingredients. Bring to boiling over medium-high heat. Cover; place in oven and bake 1 hour.
  4. Stir beans; remove cover.
  5. Bake 1 hour to 1 hour 15 minutes, stirring occasionally, until beans are tender and of desired consistency. If desired, transfer beans to a casserole for serving.
