  • 0.5 cup carrots grated
  • 0.7 cup couscous uncooked
  • 0.8 cup less-sodium chicken broth fat-free
  • teaspoon garlic salt 
  • 0.3 cup green onions minced
  • 0.5 teaspoon ground cinnamon 
  • teaspoon ground coriander 
  • 1.5 teaspoons ground cumin 
  • ounce lamb loin chops trimmed
  • tablespoon olive oil 
  • 0.3 cup orange juice fresh
  • teaspoons paprika sweet

Directions

  1. Prepare grill.
  2. Combine paprika and next 4 ingredients in a small bowl; stir well to combine. Reserve 1 1/2 teaspoons spice mixture, and set aside.
  3. Brush lamb chops with olive oil; rub 4 1/2 teaspoons spice mixture on both sides of lamb chops. Set lamb chops aside.
  4. Combine chicken broth, orange juice, carrot, and reserved 1 1/2 teaspoons spice mixture in a medium saucepan, and bring to a boil. Stir in couscous and green onions.
  5. Remove from heat; cover and let stand 5 minutes or until liquid is absorbed. Fluff mixture with a fork; keep warm.
  6. Place lamb chops on grill rack coated with cooking spray. Grill 4 to 5 minutes on each side or until desired degree of doneness.
  7. Serve lamb chops with couscous.
