  • 0.5 large bell pepper green cut into 8 (1-inch) pieces
  • 1.5 teaspoons juice of lemon fresh
  • tablespoons olive oil 
  • 0.5 cup onion thinly sliced
  • 0.3 teaspoon oregano dried
  • 0.5  onion red cut into 8 (1-inch) pieces
  • 0.3 teaspoon salt 
  • pound chicken breast boneless skinless cut into 32 bite-sized pieces
  • servings tzatziki sauce

Directions

  1. To prepare marinade, combine first 6 ingredients in a large zip-top plastic bag; add chicken. Seal and marinate in refrigerator 3 hours; turn occasionally.
  2. Prepare grill.
  3. Remove chicken from bag; discard marinade. Thread 4 chicken pieces, 1 piece each red onion and bell pepper, 1 mushroom, and 1 tomato alternately onto each of 8 (10-inch) skewers.
  4. Sprinkle with salt and black pepper.
  5. Place kabobs on grill rack coated with cooking spray; grill 12 minutes or until chicken is done, turning once.
  6. Serve with Tzatziki Sauce.
